As a craftsman, my job is to channel all the wisdom of the past that I have inherited towards Brochales Hams. In the same way, I have the responsibility to pass this knowledge on so it may continue from generation to generation.
I name some of my jamones, and I feel their absence when they make their way to the table. Creating Jamones Brochales is the most important thing that has happened to me in my life. Since I was a child I knew that this was what I wanted to do. And this has allowed me to continue with the heritage of my family tradition.
