The base and the foundation of my curation process in the drying room is the cold and dry climate of this province of Spain, Teruel. It is one of the coldest areas of my country, sometimes reaching an icy -20C !!
The windows of my drying room face to the north of the Sierra de Albarracín (Spain), from where a wind from the north called “cierzo” comes. It does not have any moisture, which is what I need for my curation process to be perfect – from the inside out.
The smell of the facilities of my drying room is exquisite. It smells like pure jamón, northern air, centuries-old forests, passion and time, a long time.
Thanks to this natural drying process, my drying room is quite different from other industrial ones, making me unique. In my home this type of drying room is associated with a higher quality of the product – less salty, softer and so much better for health.
